Easy Chinese Sausage Fried Rice

INGREDIENTS

  • 2 Bianco & Sons Chinese Brand Sausage Links, uncased
  • 4 Medium sized Bianco & Sons Chinese Style Boneless Pork Strips, cooked and diced
  • 2 Cups of day old rice (cold day-old rice is the key to a good fried rice)
  • 2 Small carrots cut into ¼ inch rounds
  • 1 Cup fresh snow peas
  • 2 Garlic cloves, smashed and minced 
  • 1 1 Inch piece of ginger, peeled and diced
  • 2 Large eggs, beaten 
  • 1 TBSP Mirin 
  • 2 TBSP Soy sauce
  • EVOO
  • Salt and Pepper to taste, (we used 1 TSP salt, ½ TSP fresh cracked pepper)

EXTRA/GARNISH

  • Chopped cilantro
  • Chopped scallions

METHOD

  1. Roast Bianco & Sons Chinese Style Pork Strips in oven until cooked through, dice and set aside 
  2. Add 1 TBSP EVOO and Bianco & Sons Chinese Style Sausage to cold sauté pan. Brown and cook through. Pull from pan with slotted spoon or spatula, leaving sausage fat in pan
  3. Add ½ TSP of EVOO to pan with the rendered sausage fat and allow to heat up on medium high heat until little white wisps of smoke begin to form
  4. Add carrots to pan and cook for 2 mins before adding snow peas. Season with salt and pepper
  5. Add Chinese pork sausage and pork strips into pan, sauté for 1 min
  6. Make a well in the middle of the pan, add ½ TBSP EVOO to well then add garlic and ginger. Sauté for 45-60 seconds until fragrant
  7. Add leftover cold rice to pan, stir to combine then add soy sauce and mirin. Stir again
  8. Make a well in the middle of the pan again and add beaten egg. Stir continuously until a soft scramble forms. Once egg is cooked mix into fried rice thoroughly

TO SERVE

Sprinkle with chopped cilantro and scallions and enjoy!
