INGREDIENTS
- 4 Bianco & Sons Game Day Sausage links
- 4 sandwich rolls or Italian sub rolls
- 1 bunch broccoli rabe, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, sliced
- 4–6 slices prosciutto di Parma
- 4 slices aged provolone, shaved or sliced
- Salt and black pepper, to taste
- Optional: red pepper flakes for heat
Instructions:
- Cook the Sausage
- Grill or pan-sear the Bianco & Sons Game Day Sausage over medium heat, turning occasionally, until fully cooked through and nicely browned on the outside.
- Prepare the Broccoli Rabe
- Bring a pot of salted water to a boil and blanch the broccoli rabe for 2–3 minutes.
- Drain and set aside.
- Sauté the Broccoli Rabe
- In a large pan, heat olive oil over medium heat. Add garlic and cook until fragrant.
- Add the broccoli rabe, season with salt, pepper, and optional red pepper flakes, and sauté for 4–5 minutes until tender.
- Assemble the Sandwich
- Place each sausage in a roll. Top with sautéed broccoli rabe, a few slices of prosciutto di Parma, and shaved aged provolone.
- Finish and Serve
- Optional: place assembled sandwiches under a broiler for 1–2 minutes to melt the cheese. Serve warm.
